Cooking Instructions

  1. Soak & Pressure Cook: Rinse 120g dry rajma and soak in ample water for 8–10 hours. Discard soaking water. Add fresh water (approx. 400ml), a pinch of salt, and pressure cook on medium heat for 5–6 whistles until tender.
  2. Bloom the Aromatics: Heat 1 tsp of cold-pressed mustard oil in a heavy pot until it smokes lightly, then reduce heat. Add cumin seeds; let them crackle. Add the chopped onions and sauté until translucent and golden brown (5–6 minutes).
  3. Build the Masala Base: Stir in ginger-garlic paste and cook for 1 minute until fragrant. Add tomato puree, turmeric, coriander powder, Kashmiri chilli, and rock salt. Cook on medium-low heat until the moisture evaporates and the oil separates from the masala.
