Cooking Instructions

  1. Soak the Legumes: Rinse 80g yellow moong dal, 40g urad dal, and 1/4 tsp fenugreek seeds until the water runs clear. Soak in room-temperature water for 4 hours. Drain thoroughly.
  2. Grind to a Froth: Transfer the drained lentils to a blender with 1/4 cup cold water. Grind until smooth and airy. Pour into a bowl and whisk vigorously with a spatula for 2 minutes to aerate the batter.
  3. Season: Fold in minced ginger, chopped green chilli, cumin seeds, chopped curry leaves, and rock salt.
  4. Aerate & Steam:
    • Natural Method: Cover and leave in a warm spot for 8 hours to wild-ferment until bubbly and light.
